Copa’s January Wine & Dine dinner invites guests on a culinary journey inspired by the flavors, stories, and communities found along Highway 90. This special evening celebrates comfort food classics, regional influences, and Texas-made wines, all thoughtfully paired and presented as a guided, coursed dining experience.

Each dish on the menu reflects a stop along the road, blending nostalgic flavors with Copa’s creative touch. The evening is paired exclusively with wines from Mil Veranos, a Texas winery based in D’Hanis, showcasing the depth and character of locally produced wines.

Guests will enjoy a seated, multi-course dinner beginning promptly at 7:00pm. Throughout the evening, the Copa team will share insights into the inspiration behind each course and the wines selected to complement them.

Bill & Rosa’s Steakhouse Potato Puffs
Dill pickle flavored potato puffs topped with cheese, bacon, sour cream, and pickled jalapeños.

Ham & Bean Soup with Garlic-Cheese Biscuits
White beans simmered in rich ham stock, served alongside warm garlic-cheese biscuits with herbed butter.

Baeckeoffe Alsatian Stew
A hearty stew of beef, pork, and lamb simmered in Riesling with potatoes and vegetables, served with sauerkraut and bread.

Concha Ice Cream Sandwich
A sweet Mexican concha filled with vanilla ice cream and finished with caramel sauce.
Paired with Mil Veranos “Chacha Rosé” Sparkling Wine, D’Hanis, Texas
